What To Do
Small dice your cucumber.
Roast your diced cucumbers at 350F for about 10 minutes then let them cool completely (you can put them in the freezer for quick cooling). This will dry them out so they don't water down the sauce.
Mix the yogurt, lemon, Bad Wolf, and the cucumbers together.
Move to a serving bowl.
Right before serving drizzle with olive oil and toss in the scallions. Fold gently so that the sauce appears "broken."
