Lion's Mane 'Crab' Cakes
Lion's Mane Mushrooms are one of our favorite ingredients to substitute for seafood, they have an incredible texture and flavor. This time we are mixing up some faux 'Crab' Cakes that are sure to please. We make ours gluten free, but it's totally up to you!

What You Need
1/2 pound Lion's Mane
1/3 cup sliced Celery
1/4 cup diced Red Onion
2 Tbls diced fresh Chile Pepper (Use any chile you choose, for a mild flavor try a bell pepper, for a spicy cake try jalapeno!)
1/3 cup Cracker Crumbs (we used Milton's Gluten Free Crackers)
1 Egg
1 Tbls Mayo
2 Tbls Fresh Parsley
Firewater Salt and Pepper blend to taste
Neutral oil for frying
What To Do
Tear apart your Lion's Mane into small strips and saute on high heat.
Season to taste with our Firewater blend.
When the mushrooms have reduced in size by half (about 2 minutes) take them out and let them cool.
Mix all the ingredients in a bowl.
Heat some oil in a pan.
Form into 4 small patties and fry on high heat until browned on both sides.
Serve with our Red Dirt Remoulade & garnish with a lemon wedge and fresh parsley.
