Lion's Mane 'Lobster' Rolls

What You Need

  • ½ pound Lion’s Mane Mushrooms⁠

  • ½ cup Mayo⁠ (or your favorite vegan substitute)

  • ¼ cup thin sliced Celery⁠

  • ¼ cup diced Red Onion ⁠

  • A few good sandwich rolls or hot dog buns⁠

  • 1 lemon⁠

  • Thin sliced scallions or chives⁠

  • Red Dirt and Low Rider (or Adobo Seasoned Salt)

What To Do

  • Tear apart the mushrooms, season with Adobo Salt, and sauté on high for about 2 minutes. Mushrooms should shrink to about half size.

  • Let the mushrooms cool.

  • Take your Celery, Onion, Mayo, and 1 tsp of Lemon juice and mix in a bowl.

  • Season with a few dashes of Red Dirt and stir in your Mushrooms. ⁠

  • Place the mix into your rolls, garnish chives, a sprinkle of Red Dirt, and a squeeze of lemon juice.⁠
