What You Need
1 8 oz block of cream cheese
1c of your favorite shredded cheese
1/4 cup pickled jalapenos, diced
1 Tbls of Triple Trouble (You can use any of our BBQ Rubs: Beet-B-Q, Dad Bod, The O.C., Twelve Bar Bluebs or Bad Wolf!)
1 pack of bacon
1 pack of sausages
BBQ sauce
Minced cilantro
What To Do
Preheat your oven to 350F or light up your grill.
Take your cream cheese, shredded cheese, jalapenos (diced), and Triple Trouble and mix in a bowl.
If you need to loosen it up, try adding a few tsp of water, one at a time.
Take your bacon and slice off the last 1/3 from the length of the strips. Make sure you are removing the thinner side, as the wide part of the bacon makes for a better "cup."
Slice your sausages into 1/2 inch chunks.
Wrap your bacon around the sausage chunks forming a small "cup."
Pin it in place with a toothpick.
Fill your Pig Shots with the cheese mixture; we recommend a piping bag, or a zip lock with the corner cut out, but you can spoon it in.
Cook at 350F for about 40-60 minutes, until the bacon is somewhat crispy.
Remove from the oven and let cool about 10 minutes.
Drizzle with warm BBQ sauce and sprinkle with cilantro.
Enjoy!!!
