Spinach & Artichoke Dip
During the summer we like to enjoy cold dips, and our Spinach & Artichoke Dip is a family favorite. Takes about 20 minutes to make and should be served with a good crusty bread.

What You Need
Mountain Joy (or Tuscan Blend)
Four Thieves (or our Rosemary Garlic Salt)
Cracked Pepper
1/4 cup Mayo
1/4 cup Sour Cream
1 8oz Stick Cream Cheese
1/2 of a small Onion
1 clove of garlic
1 14oz can of Artichoke Hearts
1# bag of frozen Chopped Spinach
1/2 cup Parmesan Cheese

What To Do
Dice your onion and garlic.
Add your olive oil, onion, and garlic to a small saute pan.
Saute on medium heat until onions are translucent, do not burn the garlic.
Strain your artichokes, then add them, the Spinach, and 1 Tablespoon of water to the pan.
Season with 1/2 Tablespoon of Mountain Joy, 1/4 tsp of Four Thieves, and a few cracks of fresh pepper.
When the veggies begin to steam add in your stick of cream cheese and fold everything until the cream cheese begins to loosen up.
Turn off the heat.
In a medium sized bowl mix together the mayo, sour cream, and parmesan.
Fold in your cooked ingredients until everything is incorporated.
Can be enjoyed immediately or cooled in the fridge for later.
Best served with crunchy bread or crackers!
